We take great care in sourcing quality local ingredients. We don’t buy the typical cream cheese off the supermarket shelf. We buy our cheese direct from an award winning artisan cheesemaker. It starts with good quality pasture in County Durham, on a farm in Mordon (near Sedgefield). The milk spends barely any time as milk before the cheese making process starts. It’s not put in to a container and on to a lorry and off to the cheesemaker. Instead the cow is milked, and the milk is pumped straight into the dairy. The cheesemaking process takes just a few days. It’s usually started on the Monday and the cheese is ready for us to collect on the Thursday. We then make cheesecake on the Friday and sell it at a Farmers’ Market on the weekend.

During the summer months, we source our fresh fruit from a friend who has an amazing allotment in Wolviston. Strawberries, raspberries, blackcurrants, redcurrants, gooseberries, blackberries, cherries and rhubarb are just a selection of the fresh fruit to come from there.
